Potato Pancakes – Dinner for less than a dollar
You need a bag of potatoes, onions, some eggs, and a ton of cooking oil. This meal will be so full of fat, starch, and cholesterol that you’ll be able to hear your arteries stiffen as you eat it.
Peel about 2-3 times as many potatoes as you would normally eat as a side dish if they were cooked, and cut them using Grater. Unfortunately we don’t have a grater, so this was one of the rare instances where the food processor came in handy. Also chop the onions as desired, then put them with the potatoes.
Dump the shredded material onto a towel and squeeze out as much water as possible. This step is what will make or break the meal (and you).
Place the pieces back in a bowl (or in my case a pressure cooker because it resembles a bowl enough) and add the flour. I prefer to add a little more flour and then continue adding the eggs until the mixture is somewhat sticky, but there is plenty of room for experimentation.
Now use a frying pan (I prefer cast iron because it lasts forever and one can use metal utensils on it without any damage) With plenty of oil (several tablespoons per pancake). Make the pie the size of a palm and as thick as a finger. My first pie wasn’t very good (my first never was for some reason) but I quickly adapted to it.
DW suggested having the pancakes with apple sauce which we did. I think mustard is also a good choice.
My general opinion about this meal: They’re as unhealthy as French fries because of all the oil but they’re also very filling for the same reason. It takes a long time, especially if you don’t have access to food processors or child labor (hi mom! ). I’m not sure I would repeat this as I need the arteries at a certain level.
