Vegetarian chili in a slow cooker

This recipe is great because it can be cooked in the morning and eaten in the evening.

Start in the evening by soaking some black-eyed peas and some navy beans. It can be pressure cooked in the morning while DW takes a shower

And I chopped up some green onions (found a few in the fridge), a large regular onion (basket on the counter), a jalapeno pepper (there wasn’t any in it, so I improvised and got out some vinegar/killer pepper bottle hot) a bunch of corn (from the freezer) . Mix all this together with a large can of chopped tomatoes and cook slowly over low heat for 8 hours. The spices to add are oregano, chili powder, and cumin. You should have twice as many beans as you have tomatoes. Half as much corn as tomatoes and nearly as much onions as corn, maybe a little more than corn. Spices to taste. an experience! Chopping vegetables doesn’t use water, so it won’t take away DW’s shower pressure and so she won’t be aggressive when she comes out of the bathroom (like all those other times when I start doing laundry right after DW arrives and I wake up because I think the noise won’t wake her up – you see, I First class, considerate
